Hierve el Agua
This is the most incredible natural feature I’ve ever seen. The water bubbles up through calcium carbonate-rich rocks, and the result are these stunning cliffside pools, colorful waterfalls, and intricate patterns. We hiked around the base of the falls on a stone path that would absolutely never be allowed by the national park service, then back up past lots of wild agave and free air plants and bromeliads. Then you change into your swim attire and stare at the rocks.
I still think about this and it blows my mind, I’m so glad we went out of out way to stay in Mitla and get there early. Stunning.
And you can spend all day there for like…$9.

At the end of Day 4 we took an overnight bus to Huatulco, on the coast. We disembarked with our packs at 6:30 am and walked straight to the beach in La Crucecitas and watched the sun come up with some pastries acquired the night before. 😂 We made the town our base for the last half of our adventure and picked up a rental car for the last three days. We cruised up the coast and spent a fun night in Puerto Escondido, randomly lucking into the best spot on the beach for dinner because I had to use the bathroom. There was a big marlin tournament going on. Puerto Escondido was the only place we went that was busy and expensive, so we fled back south to eat seafood tacos.

On day two we visited the palenque of @mezcal_anc

On day two we visited the palenque of @mezcal_ancestral_numana to see the process for making mezcal. Toby and I loved seeing the whole process (since we are bubbling many of our own concoctions in the spare room). It’s incredible. We learned that there are about 15 types of agave used for mezcal, and some of them take over 20 years to mature. Only one type can be cultivated (Espadin) and those still take 6-8 years to mature and produce a piña for slow-roasting and fermenting. Each type tastes very different. The family who owns the palenque have been making mezcal for many generations, and they are very active in trying to protect the wild agave plants, which are in danger of being over-harvested.

I made it to 40! Toby and I spent 10 days in Oaxaca, Mexico to get out of the snow and celebrate. It was such a fun trip! Incredible food and amazing history. Murals and sketchy street tacos. Ordering ‘mixed’ tacos from a place cooking pig heads in a giant vat actually seemed pretty tame after some of the mysterious meats we ate. We started out in Oaxaca City, which is loaded with fun markets, beautiful rooftop restaurants, and abuelas cooking memelitas on every corner. They process a ton of chocolate, and whenever you are near a chocolate shop the smell is outrageous. We had a list of foods and drinks to hunt down, including pulque, a partially fermented back-room cloudy beverage made from agave (see cloudy beverage on slide 5). It was DELICIOUS. We did not get sunburned, so no comments about our ridiculous hats. 😂

Sunday we dug out all of the fruit trees and checked for vole damage. The snow is surprisingly deep (aka once you fall in it is over for you). Pistol helps by trying to eat the shovelfuls of snow as they fly through the air, and Puma inspects each tree for signs of voles once they have been dug out. 25 fruit trees, like a couple of idiots. We unanimously agreed that damage to the sweet cherries would be the most tragic (they pollinate each other, take FOREVER to mature, and their delicious fruit should not be possible in our zone).

Toby taught two introductory beekeeping classes th

Toby taught two introductory beekeeping classes this month and both classes filled up right away. It’s awesome to see so many people interested in getting started with bees.

Keeping them in the mountains through our cold, snowy winters and bear-filled falls has a unique set of challenges.

In the front row was a young gentleman of about 10 taking notes furiously. He lives next to a small specialty farm, and wants to raise bees to help pollinate @hungrybeargardens delicious produce.

Building a community of beekeepers can make a huge difference (like the time I captured a swarm and didn’t have enough frames, so I drove straight to @anniebananigans house in a bee jacket and hood with the swarm in the back to borrow some 😂😂😂)! (I am mostly hands off with the bees, but Toby was on a fire assignment out of state.)

If you are in the area, check out the McCall Arts and Humanities Council - Cabin Fever classes! They happen every winter and there is everything: cooking, dance, writing, painting, beekeeping, really something for everyone. The second class was hosted by the New Meadows Library, which has a great small conference room!

A tour around the final weekend of Winter Carnival: the commercial snow sculptures, the children’s parade, and the Saturday night fireworks.

Someone in charge in McCall LOOOVES fireworks. 😜 We are a tiny town but have one of the biggest 4th of July displays in Idaho. They are in the sky for all major celebrations. We take it for granted sometimes that you can get to most events in McCall in 10 minutes, find parking, and not feel crowded. There was free live music all night and I had a delicious pizza cone, which is just what it sounds like.

We hatched eggs from our True Whiting rooster (light green, if he laid eggs) and our Dominant Copper hen (chocolate brown) in March and now the two resulting hens are laying these fun dark olive eggs! I do not think this is a Punnett square situation, so it’s fun to see the results.

We had a satisfying weekend of demolition at our house…the floors are gone in the living room and kitchen and the backsplash (my nemesis, this hideous backsplash) is gone. Next, the cupboards are getting shuffled around. We’re moving the fridge. Finally, the fermentation crocks will have a place of honor. It turns out I have too many plants. We cannot find anything in the house, help.
